With its long coastline, Brittany has a history of fishing, and its cuisine often features seafood. Oysters (Huitres) are a Breton treat, and one of the best places to enjoy them is in the small fishing village of Cancale, located on the coast of Brittany between Saint-Malo and Mont Saint-Michel. Cancale's waterfront is lined with restaurants, all serving oysters, moules, shrimp, and other fresh fish. In season you can sit outside and enjoy the views and the warm air while eating delicious fresh seafood. But perhaps the most fun way to have your Cancale oysters is to buy them fresh from one of the vendors in the small market area near the Fenêtre Jetty. Choose the size and quantity you want (plates hold a dozen), and watch them be opened while you wait. Take your plate over to the sea wall, have a seat, and dig in, dropping the empty shells over the wall. Delicious! At low tide you'll even have a view of the oyster beds. Talk about fresh! Oysters in various forms will appear on many restaurant menus along the coast of Brittany.
