Fast TGV trains from Paris whisk you to Reims in as little as 45 minutes, so you can easily visit Reims in a day from Paris.

With good planning and an early start, you can ride the TGV to Reims, visit the city, take a train to Épernay, see the sights there, and return to Paris in the evening, although this would be a long day and you must plan the transport links carefully in advance.

If you want to stay a little longer, there are regular trains between Reims and Épernay. We stayed in Reims and did a day trip to Épernay, which worked out well.
